Dart Mountain Releases NI’s First Alpine Cheese

Made using cows’ milk, each fifty pound wheel has the characteristic ‘eyes’ of some Alpine cheeses.

The new cheese joins Dart Mountain’s pickle and granolas, and Sperrin Blue and Dart Mountain Dusk cheeses.

Julie Hickey, cheesemaker said, “Our Kilcreen cheese is made to an Emmental-style recipe. It’s a pasteurized cheese. We are ageing the cheeses anywhere from four to ninth months and beyond. At four months the flavour is nutty and relatively mild, growing more intense as the ageing process continues.

“Kilcreen would make a great addition to cheese boards, as a feature in sandwiches or to add richness and depth of flavour to cheese fondue.”
