Mochi – made with pounded and sweetened rice flour to create a distinctive chewy texture – is a Japanese delicacy and expected to become a culinary trend in Britain over the coming months.

Tsuki Mochi has updated the classic Japanese dessert for the UK, exchanging the traditional sweetened red bean paste with smooth ganache and hand-rolling each sphere in London before coating them in a biscuit crumb or cocoa.
