Cotswold Mozzarella has now joined Simon Weaver’s Cotswold Brie and Cotswold Blue as an essential stock line on the cheese shelf. Practically the only farm produced Mozzarella the cheese has the added appeal of being produced organically from the farm’s own herd of cows.
The cheese is produced using cultures rather than the more industrial citric acid method which results in a creamy fresh flavour. Beautifully presented as a 130g ball or as Mozzarella Mini’s in 30g balls, the cheese is rapidly gaining a dedicated following.

Bart Spices has announced the launch of a new range of fairtrade organic herbs.
The Bristol based ingredients expert, will be the first major herbs and spices supplier to bring fairtrade herbs to the UK consumer, and are available to buy from mid July. The first four to launch will be basil, marjoram, thyme and mint in recyclable tubs, with an additional four: parsley, sage, fennel seed and rosemary, to follow in November.
Bart Spices has always held a policy of responsible sourcing and was the first to launch fairtrade spices in 2005 with the launch of fairtrade Vanilla Pods. This was closely followed by extensions to the range, bringing the total number to 19. In early 2011 many of the Bart products were also certified by the Soil Association as organic, thus making them both ethically grown as well as harvested.
