NATURAL SOY LECITHIN - A BASIC EMULSIFIER. Soy lecithin stabilizes foams created by beating air into flavoured juices or purees. Lecithin can be used to create a multitude of type emulsions, oil and air/water/water. A popular application is to convert any juice or flavoured liquid into a very light foam. These foams can also be frozen to get solid foams.
