  • Dev Biswal, chef-patron of Margate's Michelin-listed Ambrette Restaurant, gave live recipe demonstrations at farm shops across Kent last week

The chef, who was promoting his new range of Indian-style marinades, treated customers to free cooking sessions at the Lower Hardres Farm Shop near Canterbury and Quex Barn in Birchington.

“We have some excellent farm shops in Kent, showcasing the very best fresh produce and artisan foods around – they do a great job in giving the food-loving public a wide choice of the best quality local and seasonal produce,” said Mr Biswal. “If I can help these shops sell more meat and fish with the marinades, everyone benefits,” he added.

The marinades, as used in Ambrette, have been made available in response to customers wanting to recreate the restaurant’s distinctive style and flavours at home. Mr Biswal is critical of the ‘fast-food mentality’ of some Indian establishments, who pre-cook meat, then fry in a sauce to order, without giving the ingredients time to absorb flavours from the herbs and spices.
