  • Opening a fish and chip shop and a gourmet restaurant is expected to triple the business of a renowned Kent fishmonger

The Ramsgate-based shop, Eddie Gilbert’s unveiled the plans last month.

Both ventures are proving a hit with locals.

“The restaurant is practically full every night of the week. I’m absolutely exhausted but very satisfied with how busy we’ve been,” said Jonny Dunhill, owner.

All fish is sourced locally, making it fresh every morning.

“We now sell fish in various ways. Customers can buy it fresh, battered with chips or as a more formal meal. It’s a very logical way of doing things because it means stock is never wasted,” said Mr Dunhill.

The business is planning to host celebrations in January.

“We’re run off our feet at the moment, so haven’t had time. Hopefully when the Christmas rush is over, we can crack open a few bottles of Champagne and toast our success,” said Mr Dunhill.

Previous experience includes running a London-based wholesale shellfish company for 12 years.
