Cooleeney Reveals Irish Ruby

The cheese is handmade using milk from the Maher family’s herd of pedigree Friesians that has been bred over four generations.

The first addition is Ruby, an ale washed soft cheese. Ruby is created using locally crafted red ale, made by The White Gypsy brewery in the nearby village of Templemore. The resulting Ruby cheese has a soft, velvety texture, an earthy aroma, and is smooth on the palate with a distinctive malt flavour and pleasant, lingering aftertaste.

The family has recently built their own smokehouse on the farm, which has resulted in two new variations; Smoky Tipperary Brie – a mild, creamy body with a subtle oak smokiness, and Smoky Tipperary Orchard – a semi-hard cow’s milk cheese that is cellar aged before being smoked using apple wood.
