  • London-based charcuterers Cannon & Cannon are set to run courses in charcuterie for retailers and consumers at its purpose-built facility in the capital's Borough Market

The wholesaler will work in conjunction with British artisans to provide a range of courses and tastings, including cured meat production, butchery, terrines and pates, pie making and sausage making.

The classes will start in February of next year.

Sean Cannon, founder of the Meat School said, “We try to educate and showcase the versatility of what is possible.

“Retailers will not only get a better understanding of the work and skill that goes into British cured meats, but may be inspired to add value to the range they already sell in store.

“The knowledge gained at Meat School will ensure that retailers can discuss their product range with informed confidence.”
